Gumbo is a Louisiana tradition. I was introduced to in on my first trip there. To me it is a cross between a stew and a soup and as to what the traditional recipe is, well that varies from kitchen to kitchen. This is the Gumbo cooked in my kitchen.

Last night I cooked our first full paleo dinner. Roast Chicken and vegetables. It was simply delicious and I didn’t miss the mash potatoes one bit. It’s funny how things lose their appeal when the truth about them is revealed. I had a Wizard of Oz moment this weekend.
